Multimillion-Dollar Olive Garden Back on Target for the Las Vegas Strip
The restaurant in third-floor space above Target offers views of the Park MGM

First revealed back in August, but showing few signs of progress atop the Las Vegas Strip’s first Target retail outlet, new paperwork uncovers Olive Garden is back on track to bring its eighth local restaurant to Las Vegas Boulevard.
Taking over the currently vacant space 300, the restaurant will cover a substantial 12,564 square feet and host a maximum occupancy of 413 inside. Featuring floor-to-ceiling windows and views of the Park MGM resort across the street, details of accessing the third-floor venue have not been released.
Yet to be unveiled by its parent company, or the Showcase Mall’s landlords Gindi Capital, the interior remodel has been assigned an estimated construction budget of $3,750,000. Contractor JM Stitt Construction has worked on recent Olive Garden launches in California, plus earlier remodels of Kona Grill at Town Square and Fleming’s Prime Steakhouse in Summerlin.
One of a handful of nationally recognizable dining brands yet to make a home on the Strip, the ubiquitous chain is known for its “Tour of Italy” plates, “Never Ending Pasta Bowl” meal deals, unlimited soup, salads, and breadsticks and a lengthy, casual Italian-inspired menu. The first local Olive Garden debuted in 2008, and remains open on Sunset Road in Henderson.
